Maize was domesticated some 8,000 years ago in the Tehuacan Valley of Mexico. And to this day, maize is the culinary thread that appears in Mexican cuisine from the most humble indigenous community cooking to the most elevated modern cuisine that we might find in a 5 star restaurant in Mexico city. 

 

Is it any wonder then that in 2010 the cuisine of Mexico was named an intangible cultural heritage of humanity?

 

Come and join us on our culinary expeditions as we fly through time and space discovering the ancient cuisine of Mexico as taught to us by its traditional community cooks or its mestizo cuisine taught to us by the young chefs making their name in Mexico as the old combines with the new in the manner it has since the Spanish conquest.
